RICOTTA CAKE malta

RICOTTA CAKE

Ingredients:

Short pastry recipe
TOP FROLLA g 1000
Butter or margarine g 350
Caster sugar g 120
Whole eggs g 150


Cheese cream recipe
IRCA CHEESECAKE MIX g 1000
Fresh Ricotta g 1250
Lukewarm water g 1750
Whole eggs g 500
 

Preperation:

Short pastry recipe
Beat all the ingredients together in a planetary mixer equipped with paddle attachment until they are completely amalgamated. Place in refrigerator for at leastone hour then roll out with sheeter to the desired thickness. Line the moulds with short pastry keeping a 3 cm high border.


Cheese cream recipe
Mix all the ingredients with whisk reaching a smooth cream. Fill the short pastry base with a layer of 3 cm of the obtained cream and decorate the surface with short pastry stripes. Bake at 200-210°C for about 35-40 minutes. After complete cooling decorate the surface of the cake dusting with BIANCANEVE PLUS.
It's possible to add to ricotta cream 150-200 g of CHOCOLATE CHIPS.
