RAINBOW PASTES are mould-able, coloured sugar pastes which, thanks to their special formulation, are extremely versatile and perfect both for covering monumental and special event cakes, and to create decorations. The available colours are: blue, green, red, yellow, pink, lilac, black and white. RAINBOW PASTES have an intermediate consistency, in between Princess Paste and Pasta Dama Top. RAINBOW PASTES are highly resistant to changes in temperature and to humidity without cracking; their extreme elasticity allows them to be rolled out very thin with a rolling pin or sheeter. RAINBOW PASTES have a delicious natural vanilla flavour and the RAINBOW PASTE WHITE can be coloured as a mass with water-soluble colourings to obtain beautiful pastel hues, while all the other colours can be mixed together to obtain particular shades of colour. Moreover, they can be coloured on the surface by using an airbrush with water-soluble food colourings. The green, red, yellow and black RAINBOW PASTES are available also in the version with AZO colourings. In this case the colours will appear brighter and more intense.

Take out the desired amount of RAINBOW PASTE from the package and lightly knead by hand or in a planetary mixer equipped with hook or paddle at low speed, for enough time to soften their structure. If stored at a temperature lower than the suggested one, RAINBOW PASTES may present a very hard consistency: in this case take out the desired amount and heat it very carefully in a microwave oven at low power for a few seconds, until you obtain the desired consistency.

Cake coverings:

Roll out with a sheeter or a rolling pin until you reach the desired thickness; if needed, dust lightly with starch or confectioners' sugar, cover the cakes, making sure that the paste sticks well also to the sides. If you need to cover cakes with especially tall sides, we suggest proceeding separately by covering the surface with a disc of the right size and the sides with a strip of paste.

Tip: to create a stronger barrier against humidity and to avoid problems with excessive softening of the RAINBOW PASTE, we suggest applying a thin layer of butter cream between the cake and the sugar paste.

- Creating decorations:

Mould by hand or place the paste in silicon moulds, then remove immediately.
